<p><a href="http://www.109cheeseandwine.com/wp-content/uploads/2012/02/IMG_9656.jpg"></a>Going to the farms and meeting these cheese makers and the animals is such a treat.  With the introduction of our Cheesemongers Club, we wanted to bring something special to the members and I think we hit this one out of the park.  Not only did we get to taste some amazing cheeses, but also found our prize.</p>

<p><a href="http://www.109cheeseandwine.com/wp-content/uploads/2012/02/IMG_9648.jpg"></a>Colin McGrath and Patty from 109 searched the cave for what will be called the &#8220;109 Winter Selection&#8221; from Sprout Creek Farm. The “109 Winter Selection” is a beautiful raw cow’s milk cheese.  It is aged for approximately 9 months before its released.  This cheese, washed in a straight brine for 4 months has a wonderful supple texture with a slightly pungent aroma.  As a very limited cheese, with only about 9 wheels produced, we are fortunate to have it for the Cheesemongers Club.  This is truly an exclusive treat.</p>

<p>The cheese maker, Colin McGrath, produces about thirty thousand pounds of cheese a year from the milk of this one farm in just two small rooms, each about the size of an average residential bedroom. Colin came to cheese making after making beer in his earlier years and then going to culinary school. Destined to end up fermenting something, whether it&#8217;s beer or cheese, he has definitely found his calling. When he took over the cheese making operation, Sprout Creek was making only 3 or 4 cheeses; today he makes more than a dozen, and is always working on something new and we were the fortunate benefactors this time.</p>

<p>When we order our 24-month Vacche Rosse Parmesan, we order the whole wheel to insure the freshest most flavorful cheese possible.  The amazing flavor of this Parmesan paired with the Villa Manodori Dark Cherry Balsamic is perfect culinary indulgence.  As a holiday basket, this is amazing. It is so good you should send one to yourself.</p>

<p>The ingredients:</p>
<p>The Parmesan -</p>
<p>“Vacche Rosse&#8221; (meaning: red cows), also referred to as &#8220;Razza Reggiana&#8221; (meaning: Reggio Emilia race), produce much lower milk yields than the Holstein and Fresian cross, Risona Italiana those are the primary producers of Parmigiano. The protein content of the &#8220;Vacche Rosse&#8221; is said to be higher, producing a richer, fuller cheese. The color shows that tendency, a buttery yellow in tone</p>
<p>The Balsamic –</p>
<p>Villa Manodori Dark Cherry Balsamic is the unique creation of Chef Massimo Bottura, owner of two-star Michelin restaurant Osteria Francescana in Modena, Italy. An expression of Chef Bottura’s extraordinary talent for elevating the best ingredients, the condiment is a combination of authentic balsamic vinegar and prized sour cherries from Vignola near Modena. The condiment&#8217;s delectable rich, fruity aroma and taste comes from aging traditional balsamic with Vignola cherry wood</p>
<p>The Barbaresco -</p>
<p>2007 Cantina del Pino Barbaresco, Piedmont, Italy</p>
<p>The 2007 Barbaresco emerges from the glass with red cherries, flowers, mint, minerals and licorice in a gorgeous expression of Nebbiolo. The 2007 shows the warmth and openness of the vintage in a restrained, highly polished, mid-weight style that is utterly irresistible. Anticipated maturity: 2011-2022.</p>
<p>People who haven’t discovered Cantina del Pino yet owe it to themselves to do so. Proprietor Renato Vacca is making some of the most compelling wines in Piedmont today. Along with Andrea Sottimano, Luca Roagna and Giorgio Pelissero, Vacca is one of the most promising producers among the younger generation in Barbaresco.</p>

<p><strong>Butternut Squash Leak and Sage Cannelloni</strong>: Yummy perfection, dinner for two or appetizer for four people with a vodka sauce.</p>
<p><strong>Pumpkin Truffle Ravioli</strong>:  Try this with Bernard&#8217;s Porcini sauce or whip up a little brown butter with sage.  Bernard also recommends adding some sauteed brussel sprouts and hazelnuts.</p>
<p><strong>Bernard&#8217;s Housemade Sausages</strong>:  This month we are featuring Merguez (Spicy Lamb) and Pork Truffle.</p>
<p><strong>Short Ribs with Red Wine Sauce</strong>:  Garnished with fall vegetables and baby potatoes, perfect dinner for two, just add a salad.</p>
<p><strong>Cassoulet</strong>:  It&#8217;s back for the season.  A comforting stew of beans, duck, chicken and sausage topped with bread crumbs.  So good you will be glad that winter is on the way, just so you can enjoy this delicious stew by the fire with a glass of Montmiral Vacqueyras ( delicious syrah, grenache blend from the Rhone available at 109 Wine).</p>
