I would like to put offer an American cheese board featuring Vermont Shepherd cheese
as well as a blue cheese and a soft rind cheese similar to brie. Can you recommend a
blue cheese similar to a mild Stilton and a soft rind cheese that is not too “mushroomy”
or earthy? I am considering serving these cheeses with dried peaches or apricots and
perhaps a fig compote.
